Recipe: Smokey Jackfruit Gyros with Kohlrabi-Apple Tzatziki

We previously wrote about the versatility of jackfruit – a firm, neutral-tasting tropical fruit that, thanks to its meaty texture, is exceptionally suitable as a meat substitute. You can use it in many different ways; why not try these smokey jackfruit gyros!

How to make jackfruit gyros with creamy kohlrabi-apple tzatziki
- For the gyros spice mix, heat the cumin, coriander and cardamom seeds in a frying pan over medium heat for 1 to 2 minutes.
- Grind them with the black peppercorns in a mortar until powdered.
- Add the thyme and briefly crush the leaves.
- Stir in the remaining spices.
- Cut the jackfruit into thick, flat strips and toss in a large bowl with the gyros spices, maple syrup, parsley, oregano, barbecue sauce and oil, so that the marinade is thoroughly mixed with the pieces of jackfruit.
- Cover and marinate in the refrigerator for at least 1.5 hours.
- Preheat the oven to 185 °C.
- Spread the pieces of jackfruit and marinade evenly over a baking sheet lined with parchment paper.
- Roast the jackfruit until crisp, about 20 minutes.
- Stir in some extra barbecue sauce, if desired.
- Meanwhile, make the tzatziki.
- In a bowl, mix the yogurt with the tzatziki spices, mint, kohlrabi slices, apple and, optionally, turmeric.
- Warm the flatbreads according to the package instructions and spread half of the tzatziki sauce over them.
- Top with the jackfruit and lettuce.
- Fold them closed with a piece of parchment paper or aluminum foil around the bottom and sprinkle the pomegranate seeds and sumac over the top.
- Serve the remaining tzatziki separately.
