Recipe: Sucuk pide (Turkish flatbread with sausage)

“Pide is a light and airy Turkish flatbread. It’s great fun and delicious to make this bread yourself. For this recipe, you top the pide with sucuk; a hard, dried sausage made from beef or lamb.”

How to make sucuk pide

  • Put the all-purpose flour together with the salt, yeast and sunflower oil in a deep bowl and add the water. Knead everything for 10 to 15 minutes until you have a cohesive dough. The dough will be slightly sticky, but that’s not a problem. Cover the dough and leave it to rise in a warm place until it has doubled in size. This takes approximately 1 hour.
  • Preheat the oven to 200 ˚C. Separate 1 egg. Put the 4 eggs and 1 extra egg white in a deep bowl (the egg yolk is kept to fold the pide closed). Add the salt, black pepper and paprika to the eggs. Tear the mozzarella into small pieces and add it, together with the grated cheese, to the egg mixture. Mix well.
  • Turn the dough out onto a floured work surface and divide the dough into 6 balls of approximately 90 grams.
  • Sprinkle some more flour on the work surface and roll out the dough balls into elongated sheets measuring 28 x 13 cm. Place the dough on a baking tray lined with baking paper. Spoon some of the cheese mixture into the centre of the dough. Fold the edges inward and place 4 slices of sucuk on the filling. Brush the sides with egg yolk.
  • Bake the sucuk pides in the oven for 12 to 18 minutes until golden brown.
