Recipe: super-quick potato pancakes with cheese

We could all use some comfort food, and then we came across these: potato pancakes (not to be confused with latkes made from grated raw potato – also top-notch) that are incredibly delicious and so easy to make. You don’t need much more than potatoes and some cheese, so you can probably get started on this recipe right away!

Take a moment to calm down in these wondrous times with some carbs, cheese, and an instructional video so chill that you’ll automatically feel like everything is going to be okay. Once again, let’s keep eating well and deliciously…
How to make the potato pancakes
- Boil the potatoes until tender, preferably in their skins.
- Let them cool for a moment, then pull/peel off the skin. (This way they retain their most potato-y flavour – really delicious).
- Mash them in a bowl and mix in the salt with your (washed) hands.
- Form a ball from a dollop of mashed potato in your palm, flatten it slightly and sprinkle some cheese in the middle of what is now a potato disc.
- Fold the edges upwards and close the opening over the cheese.
- Turn it upside down in your palm and carefully form a ball again from the now-filled mashed potato.
- Flatten it slightly again, set aside, and repeat with the remaining mashed potato and cheese.
- Heat a tablespoon of oil over medium heat in a non-stick frying pan and carefully place the pancakes in it.
- Fry until golden brown on one side, carefully turn them over and fry the other side until golden brown as well.
- Serve warm and see how deliciously gooey the cheese strands are when you break/cut them in half.
