Jamie Oliver, the cookbook machine, is back. And how! One year after the publication of his cookbook VEG, he is launching a new book with more than 120 simple yet delicious recipes. It is a book close to our hearts, because in 7 Ways you will find recipes with maximum flavour and minimal fuss. Each recipe requires no more than 8 ingredients, and dishes such as this tagine with white fish, sweet cherry tomatoes, harissa, asparagus and couscous can be on the table in no time.

How to make the tagine with white fish

  • Put the couscous in a bowl, add a pinch of sea salt and black pepper, pour over a little boiling water from the kettle and cover the bowl. Peel the garlic, slice it, fry it in 1 tablespoon of olive oil in a shallow casserole over medium-high heat and stir in half of the cherry tomatoes. Snap off the woody ends of the asparagus, cut the stalks into rough pieces, add them to the pan and stir in a pinch of pepper and salt. Rub the fish fillets with most of the harissa, place them on top of the vegetables, sprinkle over the grated lemon zest and add the juice of ½ lemon. Add 150 ml of water and simmer, covered, for 5 minutes, or until the fish is cooked through.
  • Fluff up the couscous. Ripple the remaining harissa through the yoghurt, spoon it over the fish and couscous, and serve with lemon wedges for squeezing over.
