Recipe: Thai Sweet Potato Balls

This recipe for the most delicious sweet potato balls comes from the central region of Thailand.

How to make sweet potato balls

  • Bring water to a boil and cook the sweet potato for 15 minutes. Pierce the potatoes with a fork to check whether they are fully cooked. Mash the potatoes with a potato masher until smooth.
  • Knead the tapioca flour, plain flour, baking soda, sugar and salt into the mash. Add the coconut milk and knead until you have a smooth dough.
  • Shape the dough into marble-sized balls.
  • Heat the oil in a wok and deep-fry the dough balls for 5–10 minutes until golden brown. Remove them from the oil and drain well on a sheet of kitchen paper.
