Recipe: Tofu Steak with Shiitakes from the New Blue Zones Cookbook

Dan Buettner wrote a cookbook with 100 healthy recipes inspired by the Blue Zones, areas where the healthiest and happiest people in the world live. Take this tofu steak with shiitakes, which Dan came up with after years of research and which is said to promote our longevity and well-being. Surely that’s worth trying, isn’t it?

“This recipe originally comes from The Okinawa Program (which was developed by scientists from the Okinawan Centenarian Study), but we asked sensei Yukie Miyaguni, head of the cooking school in Okinawa, to make it spicier. This is a perfect main course for vegetarians, but it will also delight meat eaters. Dishes based on soybeans, including miso and tofu, are important in traditional Okinawan cuisine. Their diet contains many nutrients and antioxidants and few calories and little fat.”
How to make the tofu steak with shiitakes
- Cover the moist tofu with a layer of flour. Pour the vegetable oil into a frying pan and fry the tofu over medium heat on all sides until it starts to brown slightly (3–4 minutes per side).
- Pour the sesame oil into another pan. Fry the mushrooms, mirin, ginger, miso and chili flakes in it for 3–4 minutes over medium heat or until the mushrooms are cooked. Turn off the heat, add the leek or spring onion to the mushroom mixture and stir everything together.
- Place two pieces of tofu per person on a plate and spoon the mushroom and vegetable mixture on top.
- Garnish the dish with the cherry tomatoes.
