Recipe: Veggie loaded nachos with guacamole

We love nachos. Preferably loaded, because hey: more = more. But we also care about our planet, so why not make a veggie version? Tip of the day: Pulled Oats. The texture of pulled pork, more protein than chicken, and simply really delicious. Winning!

How to make these veggie loaded nachos:
- Preheat the oven to 200°C.
- Cut the red onion into thin slices and halve the cherry tomatoes.
- Season the Pulled Oats with the taco seasoning mix.
- Line a baking tray with parchment paper and spread the tortilla chips over it in a single layer.
- Sprinkle the tortilla chips evenly with Pulled Oats, salsa, grated cheese, onion, tomatoes and jalapeños.
- Repeat this step to form a second layer.
- Bake for 10–15 minutes, or until the cheese has melted and begins to brown.
- Serve with guacamole and lime wedges.
