Recipe: Vitello Tonnato by Jord Althuizen

Summer or winter, Christmas or Easter, for a large party or for two: when there’s something to celebrate, the BBQ is fired up. At least, that’s how it is for self-proclaimed pyro-culinary adventurer Jord Althuizen. In his new book Smokey Goodness BBQ Feast on Fire, the BBQ master shows you how to make complete BBQ menus and all-out Smokey dishes, such as this flaming Vitello Tonnato.

The Smokey version of the classic Vitello Tonnato gets a beautiful BBQ accent from smoking the veal and grilling the tuna, while remaining fresh and light. You can happily go back for seconds.”
How to make Vitello Tonnato
- Prepare a BBQ for indirect grilling and heat it until it reaches a temperature of 130 °C. Arrange the smoking wood chunks among the glowing coals.
- Brush the veal topside with the yellow mustard, mix the thyme leaves with the garlic, pepper and salt, and sprinkle this over the meat. Place the veal topside on the BBQ grate and close the lid. Smoke the veal topside for 1–1.5 hours, until it reaches a core temperature of 52 °C. Allow the meat to cool.
- Meanwhile, convert the BBQ to direct grilling with the cast-iron grill grate and heat it to 250 °C. Grill the spring onions and spring carrots all around until roasted and tender, and cut them into 1.5 cm pieces. Season the tuna fillet with salt and pepper, and grill it briefly and hot on all sides; make sure only the outside cooks while the inside remains raw.
- Using a sharp knife, cut the veal topside into thin slices and arrange them on a platter. Cut the tuna into 1 cm-thick slices and distribute them over the meat. Spoon the spring onion and spring carrot over the top. Spoon the anchovy mayonnaise over everything and finish with the capers and parsley leaves. Season with coarse sea salt and a generous turn of the pepper mill.
