In Thailand, they roll tufts of cotton candy into a paper-thin, light-green crêpe. Doesn’t that sound like the most delicious combination ever? If you needed one more reason to book a trip to Thailand: here it is.

You may initially visit the ancient Thai city of Ayutthaya for its historic ruins, but there’s another very important attraction: roti sai mai. Just outside the ruins, there are many stalls where you can get this sweet snack.

It’s a small, paper-thin pancake, usually flavored with pandan, but also with strawberry and banana. Tufts of cotton candy are then rolled into the pancake. Sounds like a dream, right? Especially the pandan ones.

Have you been on holiday in Thailand, but never come across this pancake? That’s understandable. Outside the city of Ayutthaya, these sweet crêpes are hardly ever found. So there’s nothing else for it but to pay those ruins a visit.
