Seada is the perfect combination of sweet and savory. This dessert from Sardinia has a melted cheese filling and is covered with a generous layer of honey.

Seada is a traditional dessert from Sardinia that was previously eaten mainly around Easter and Christmas, but can now be found virtually everywhere in Sardinia all year round.

The dessert looks like a large ravioli. The dough is made quite simply with flour (or semolina) and water, and softened with a little lard or butter. The dough is filled with fresh pecorino, and the cheese is mixed with lemon zest for a fresh, tangy kick.

The dessert is then deep-fried in olive oil or lard and covered with honey. The result: a crispy, honey-drenched dessert with a melted cheese filling. A little similar to Turkish künefe. And just like künefe, it tastes best warm.
