SOIL of Amsterdam

A new hotspot has opened on Bilderdijkstraat in Amsterdam, and we’re betting it will become very popular among Amsterdam’s hipsters. Still, SOIL of Amsterdam has so much more to offer than Instagram-worthy food alone. It’s fast-casual food, made by a chef who knows what he’s doing. Go check it out.

Who: Remco Groeneveld, Gustavo Bottino and chef Guillem Francis, from the Pullitzer Hotel.
Where: On Bilderdijkstraat in Amsterdam
When: mid-July 2018
What’s new?
The fast-casual concept. Fast food, but healthy and nutritious. This may sound boring, but it’s simply incredibly delicious. The main difference from regular fast food is that it isn’t junk food. SOIL basically serves good vegan meals, with the option to add fish, meat or dairy.
On the menu?
Vegan bowls such as the Hong Kong Bowl (XO sauce, asparagus, fennel and curry cashews), Roman Bean Bowl (beans and peas with spinach, mint and parsley, optionally topped with kimchi) and the Caulifornication (roasted cauliflower, bimi, radish, chipotle mayo, smoked tempeh). Or go for a sandwich with aubergine and baba ganoush or an avocado banh mi. You can also have breakfast at SOIL with smoothie bowls or Japanese oatmeal with furikake. Definitely worth trying.

What stands out?
If you’re thinking, ‘Boring, this is just another healthy hipster spot’: think again. Chef Guillem Francis has worked at the Pullitzer and knows what he’s doing. The food promises to be genuinely delicious.
