queso fundido

Cheese fondue boring and bourgeois? Serve it Mexican-style: lots of cheese, spicy chorizo, jalapeños and – yes indeed – TEQUILA! Bet this will become your new go-to party dish?

Nachos, bread, vegetables: you can dip all kinds of things in it. Queso fundido literally means: melted cheese. Traditionally, soft Mexican cheeses such as Asadero, Chihuahua or Manchego are used, but in principle you can use any melting cheese that creates those lovely cheese pulls.

Tequila and spicy peppers

The dish is built up in layers in a cast-iron pan or heatproof dish. The cheese is complemented with spicy chorizo, onion, bell pepper and jalapeños for the necessary kick. The whole thing is topped with some lime and tomato salsa. Making it yourself? This version of queso fundido contains all those delicious ingredients.

If you thought that was everything, you’re mistaken. Because the original Mexican version is flambéed or seasoned with tequila. It gives the cheese a shiny layer and a slightly different texture. Try it yourself!
