Star chef Arturo Dalhuisen is taking over restaurant Daalder for the next two weeks

Chefs need a vacation every now and then too, right? That seems only logical to me, especially after such a stressful period. Dennis Huwaë is therefore taking two weeks of well-deserved rest, but he is not leaving Daalder unattended. Quite the opposite, in fact, because he has appointed chef Arturo Dalhuisen as his worthy replacement. We were allowed to taste the seven-course menu yesterday – and believe me: this is something you want.

Arturo Dalhuisen is certainly no ordinary chef. During his career, the 36-year-old chef cooked at De Jonkman in Bruges (**) and as souschef at (the now-closed) De Leest*** run by Jacob Jan Boerma. In 2016, he definitively made a name for himself culinarily as chef de cuisine at The White Room*, where, with his signature of fresh notes, light acidity and refined spices, he managed to earn a first star within two years.

Favorites perfected

This means genuine works of art on your plate, which taste divine to boot. In any case, I enjoyed seven courses (with matching wines that also deserve a mention… Delicious!). A fun detail is that the seven-course menu consists of favorites from both Arturo Dalhuisen and Daalder chef Dennis Huwaë. They chose and perfected each other’s favorites: Arturo’s pigeon with pistachio and his famous langoustine, as well as the familiar Daalder stroopwafel as the final course.

A picture is worth a thousand words

The cherry and pistachio sauce with the pigeon is so delicious that I used the bread to wipe my plate completely clean. The poached egg with morel and green asparagus was just as good, and the first course, North Sea crab with watermelon and beetroot, was so wonderfully fresh that I would happily have it again tonight.
