Star chef sells his famous sauces in pop-up: ideal for Christmas

Hotel Okura Amsterdam has opened a pop-up for the second time this year. Ideal for Christmas, because here you can find all kinds of treats from the hotel to enjoy at home, such as fantastic chocolate and wonderful sauces from chef Arjan Speelman of Okura’s two-Michelin-starred restaurant Ciel Bleu. Perfect for finishing your Christmas dishes.

A great initiative from Okura: a pop-up shop with all kinds of hotel specialities. Last summer saw the pop-up’s debut, and it was an instant success. We had some fantastic sando (Japanese sandwich) there. And, surprisingly enough, at a very reasonable price too — something you probably wouldn’t expect at such a high-end place. And now a Festive pop-up has opened: especially for the holiday season.
Sauces you can buy at the pop-up
Several sauces from two-Michelin-starred chef Arjan Speelman are available at the pop-up:
- Jus de veau: delicious with meat dishes (€12).
- Red wine jus: perfect with meat or robust fish (€13).
- Black truffle jus: perfect with meat or robust fish (€18).
- Jus de morel: a wonderful addition to meat, poultry and fish (€16).
- Jus de calvados: ideal with meat, poultry and fish (€14).
- Jus de cepes: a flavourful accompaniment to meat, poultry and fried fish (€16).
Soups from Ciel Bleu
In the kitchen of Ciel Bleu restaurant, Arjan and his team have also prepared soups that will take any Christmas dinner to unprecedented heights.
- Truffle Vichyssoise: the classic French soup with potato and leek, with a hint of winter truffle (€19).
- Bisque: the famous French shellfish soup is a perfect blend of tomato purée, tomatoes, fennel and herbs (€21).
Also nice: their own sparkling wine
They also sell a Dutch sparkling wine at the pop-up; Cuvée Okura. A special creation from Amsterdam’s Okura, composed by sommeliers Noël Vanwittenbergh and Menno Tol. The sparkling wine is made in the same way as champagne (with a second fermentation in the bottle) and comes in two sizes: a regular bottle costs 48 euros, while a half-bottle costs 29 euros.
Opening hours and location of the Okura pop-up
The Festive pop-up is open Wednesday through Sunday from 10:00 to 18:00. The entrance to the pop-up store, recognisable by the white tent, is outside, next to the main entrance. You will be welcomed by a large crane, a Japanese symbol of happiness and long life. The pop-up will remain until Sunday 7 January 2024.
