Star chef Sergio Herman no longer serves meat at Pure C**

A while ago, when I ate at Pure C, Sergio Herman’s two-Michelin-starred restaurant in Cadzand in Zeeland, I was still served an amuse-bouche of bresaola (salt-cured beef) and Holstein (dry aged Dutch beef). But anyone visiting Pure C now will no longer find that kind of dish on the menu. All meat has been removed from the menu.

No meat does not mean that Pure C has become a vegetarian restaurant; since the restaurant is located on the North Sea beach, the focus will be even more on everything delicious from the sea. ‘Actually, it makes perfect sense that we now only serve fish, crustaceans and shellfish from that sea,’ chefs Sergio Herman and Syrco Bakker told Het Laatste Nieuws.

Meat has not been ordered yet

The kitchen started working on the decision a month ago, and it has not yet led to a flood of comments. ‘Just to be safe, I did develop one main course with meat, but so far it has not been ordered even once,’ says Syrco.

Complete renovation

The removal of the meat dishes from the menu coincided with the reopening of Pure C after it had been closed for two months for a complete renovation. It reopened its doors at the end of February, including a restyled menu without meat. With this decision, the chefs also want to set a good example. They no longer prepare meat, unless someone explicitly asks for it.
