With high temperatures outside, you don’t want to get extra hot standing behind pots and ovens. Stay cool and make one of these dishes, which don’t require any heat source.

Tartare

All you have to do for a summery tartare is cut meat or fish into cubes and season it. This tuna tartare is a favorite; you do have to fry the croutons briefly, but you can also leave them out. Otherwise, this steak tartare is also a good alternative. Add a nice salad and you’re all set.

Kinilaw

The Filipino answer to ceviche is called kinilaw. Raw fish is cured in citrus juice in the same way, but coconut milk is also added for an extra tropical touch. Add red chili for some heat; it’s delicious on toast. Make plenty, because you’ll keep coming back for more.

Summer rolls

For Vietnamese summer rolls, all you have to do is chop all your ingredients and arrange them on the table. Then everyone can roll their own spring rolls. You only need to turn on the kettle briefly to cook the glass noodles, but fortunately that won’t make you too hot.

Panzanella

The perfect way to use up stale bread is to make panzanella. We prefer the Italian bread salad plain, with good tomatoes and lots of basil. But in principle, you can add whatever you feel like.

Pan bagnat

If you’re heading to the park, or simply feel like a sandwich, make pan bagnat. A French sandwich that is essentially a kind of salade Niçoise on bread. You do have to boil an egg for it, but you don’t need to stand by the stove, so there’s no risk of getting even hotter.

Raw sea bass with mint-lemon dressing

A wonderfully fresh dish from Sicily. Mint, lemon and raw fish—this doesn’t get more summery. Add a salad and bread to mop up the dressing, and it’s a feast.

Strawberries with burrata

When you get a craving for something sweet, make these marinated strawberries with burrata. It may sound strange—cheese in your dessert—but just give it a try; it’s really delicious.
