Summer salad? Forget lettuce, go for watermelon, feta, strawberry and mint!

It’s hot, you’re grilling something, and of course that calls for a summer salad too. But not that same old cucumber, tomato, egg and bagged mesclun again? Boooooring! This summer, you’re taking a different approach. You’re going to shine with the watermelon-strawberry-feta-mint salad. Just as simple, incredibly delicious and a thousand times more original.

This summer salad with watermelon, strawberry, feta and mint is a party in a bowl. It’s fresh thanks to the melon and cucumber, sweet from the strawberry, salty from the feta, herby from the mint and just a little spicy from the red onion. Look no further: this salad is a hit on every BBQ plate.
Why watermelon works in a summer salad
Watermelon in a salad may sound strange, but trust us: it’s incredibly delicious. Especially when it comes straight from the fridge, it provides the perfect way to cool down your plate in the heat. And it pairs magically well with savory flavors like feta.
How to make this watermelon-feta-mint salad with strawberry
- Cut the watermelon into neat cubes, making sure there are no black seeds left.
- Cut the cucumber into cubes of roughly the same size.
- Hull the strawberries and cut them into halves or quarters (strawberry allergy? This recipe is also great without them).
- Finely chop the mint and finely chop the red onion.
- Crumble the feta.
- Make a simple dressing by stirring together olive oil and balsamic vinegar.
- Put everything together in a large bowl, toss, and season with a little salt and pepper.
Mix it up
Not a fan of strawberry? Mango works brilliantly too. Prefer vegan? Replace the feta with cubes of marinated tofu. Nuts, anyone? Roasted walnuts or pistachios are perfect. For example, briefly fry them in oil and season with rosemary.
This salad is delicious with anything that comes off the grill: chicken skewers, flatbread with harissa, lime and halloumi, shrimp, eggplant… But it’s also great on its own as lunch or a light dinner.
