Tagliatelle à la flamande: how to make it

After his first successful book, The Messy Chef Jelle is back with a sequel. In Goei Eten, he shares dishes you look forward to all day. They are so delicious that you want to run your tongue over the entire plate so you get every microscopic crumb inside you. Take, for example, this tagliatelle with white asparagus and capers—so delicious!

Jelle: “More than anything, I would love to go to the same little house in Provence every year. Even if, the last time, the mosquitoes tattooed ‘stay away from here’ in Braille on my back. Simply because I’m used to it. When I was a teenager, when my hormones were in turn creating the necessary Braille on my face, I also always wore the same shirt when going out. Simply because I was wearing it when the prettiest girl in class wanted to braid her tongue between my braces. Repetition brings peace to my mind. What’s more, I think that if a rerun of *The Champions* ever came on TV, I would watch it. Especially that episode with the misunderstanding. I love those certainties, and asparagus à la flamande is another example of that.”
How to make tagliatelle à la flamande
- Put a pot of salted water on the stove. We are making everything in the same pot, so don’t drain the water.
- Boil the eggs for 7 minutes, then remove them from the pot to cool.
- Peel the asparagus and cut them into 3 pieces. Boil them for 4 minutes and remove them from the pot. Now cook the pasta, again in the same pot, al dente as described on the package.
- Take a large pan that the pasta will fit into later. Finely chop the garlic. Melt the butter and fry the asparagus in it. Add the garlic and capers and let the butter turn nicely brown. Season with pepper and salt to taste.
- Peel the eggs and cut them into pieces. Chop the parsley.
- Drain the pasta and add it to the pan with the butter. Add the egg and parsley and serve. Finish with freshly ground pepper.
