Takoyaki: savory mini pancakes from Japan

Is this your first time? Then we recommend making a double portion so you can practice turning the mini pancakes. You can get cooked octopus at the Asian supermarket or order it from your favorite fishmonger.
Preparation
Whisk the flour and water together to make a batter, then add the beaten egg, dashi powder, soy sauce and salt. Mix well. If desired, pour the batter into a squeeze bottle or something you can use to pour easily.
Cooking
Heat the pan or plug it into the socket. Grease with a little neutral oil and, once the pan is hot, pour batter into the indentations until they are almost full. Drop a piece of octopus into each one and sprinkle with the other flavorings.
Turning
Turn the mini pancakes a quarter turn as soon as you can. Watch the YouTube video below (from 2:20 min) to see how it’s done. If necessary, squeeze a little more batter underneath the semicircular balls. Wait a moment and turn them another quarter turn. Keep turning them until the balls are round, beautifully browned and crispy. This can take fifteen to twenty minutes.
Place the takoyaki on a plate and garnish with Okonomiyaki sauce, Kewpie mayonnaise, aonori, spring onion and bonito flakes. Serve immediately.
