The trick to spending less is simply to buy products that are in season. This month, you’re doing the right thing by incorporating beetroot, kale or pumpkin into your dishes. That’s why we’ve put together a list of the tastiest, most affordable beetroot dishes for you.

Sandwich with grated beetroot, smoked cheese and horseradish mayonnaise 

Skip lunch at that nice little place for once and save around €7 with these fresh, healthy sandwiches. Replace the unnecessary rose rolls in the recipe with Kaiser rolls and you’ll spend approximately €5.50 at Albert Heijn for four people.

Roasted beetroot with goat cheese

Ideal as a starter or side dish when you have guests over. Little effort, delicious result. For four people, you’ll spend approximately €4.91.

Bulgur salad with beetroot and cucumber

This dish is a light meal salad that’s also perfect for lunch. We would add some pomegranate seeds and serve it with a generous dollop of yoghurt. For €6.39, you can serve the salad to four people.

Beetroot quiche with goat cheese and walnuts

There’s hardly a better combination than beetroot, goat cheese and walnuts. The fact that it’s also incredibly cheap is an added bonus. This quiche serves four and costs only €8.04. If you have leftovers, the quiche is also delicious for lunch the next day.

Quesadillas with beetroot and kale

Pretty much the only kitchen appliance students have at home is a sandwich press. That works out well: it’s the only thing you need for these quesadillas. Apart from the ingredients, of course, but those only cost €7.94 (for four people).
