The Brandt & Levie Asparagus Lunch

To celebrate the arrival of the white gold, sausage makers Brandt & Levie are organising an asparagus lunch at their butcher’s shop in Amsterdam’s Houthavens district.

The concept is simple: for €15, you can enjoy a plate of white asparagus. The asparagus is served with ham from Dutch pork. The gentlemen inject the ham with bay leaf and juniper, then smoke it over oak wood. It is then cooked sous vide. This way, it retains its flavour best. Add a nice glass of wine and you couldn’t ask for more.
