The mayor of Bologna is angry

Do you love spaghetti bolognese too? The spaghetti you eat does not come from the Italian city of Bologna at all. The mayor of Bologna thinks it’s time to put an end to dishes that give the impression of coming from Bologna, and he is launching a hunt.

Virgiono Merola, the mayor of Bologna, sent out a tweet calling on people to send photos of spaghetti bolognese. He regrets that his city is known for a dish that does not originate there at all. He wants the city to become known for products that actually come from Bologna, such as mortadella and, yes, pasta with meat sauce too—but prepared the way it should be.

The pasta dish that does originate in Bologna is tagliatelle al ragù. According to Merola, spaghetti is poor people’s food from Naples, and you don’t combine it with the ragù from the rich Bolognese tradition. Thicker types of pasta, such as tagliatelle or fettuccine, go much better with the meaty sauce. The mayor is collecting the photos for an exhibition at FICO Eataly World in Bologna.
