How to make the Potato Chip Tower

The most important ingredient in the Potato Chip Tower: chips. Duh. Plain chips—such as those from HEMA: yum!—are a good choice anyway. As the name suggests, they taste fairly plain, but that’s perfectly fine in this case. The salami and honey butter already add plenty of extra flavour to the snack. But feel free to experiment. With your favourite French Brets chips, for example, which you can now pick up at Jumbo. Or perhaps kimchi chips? It’s your drinks gathering.

Here’s how to make the Potato Chip Tower:

  1. Put the chips in a large bowl. Fry the salami in a large dry frying pan over medium-high heat. Work in batches if necessary: there should be a single layer of salami slices in the pan. Turn them occasionally with tongs and reduce the heat to medium to prevent burning. Fry until the salami is crisp, about 5 minutes per batch. Add the salami to the bowl with the chips and gently toss together.
  2. Add the honey, butter, cayenne pepper and 1 tsp. black pepper to the fat in the frying pan. Cook over medium-high heat, stirring constantly, until the butter has melted and the mixture is bubbling vigorously. This takes about 3 minutes.
  3. Drizzle half of the honey butter over the chip-and-salami mixture and toss with a wooden spoon or heat-resistant rubber spatula. Drizzle the remaining honey butter over it and toss again, until the honey butter coats the chips and salami evenly. ​​Pile the chip-and-salami mixture into a shallow bowl or onto a large plate and make the tower ​​as tall as possible. Sprinkle with sea salt and more black pepper.

Get creative

Of course, as the tower builder, you can let your creativity run wild. Try bacon or mortadella instead of salami, for example. Or sprinkle some chopped olives over the tower. And what about pieces of blue cheese? I guarantee it: this creation will raise towering expectations among your fellow drinks companions—and you’ll more than live up to them.
