The ultimate hangover breakfast: chilaquiles

Went a little too hard on the drinks and can barely move now? This Mexican breakfast is perfect hangover food for Sunday: tortilla chips, salsa and a fried egg. You probably won’t even have to go to the supermarket for it; you’re bound to still have these ingredients in your pantry.

This traditional breakfast, called chilaquiles, was actually also invented by simply using all kinds of leftovers. In Mexico, they cut leftover tortillas into triangles and fry them: just like that, you’ve got your tortilla chips. They reheat the salsa from the night before and toss the chips in it. Then add a fried egg on top and breakfast is served.
Whatever you can find
The great thing about this dish is that, besides the traditional toppings, there’s plenty of room for variation. Have some chicken or vegetables in your fridge? Throw them in! Grate some cheese over it and your nacho breakfast is ready. Do you also have guacamole or sour cream lying around? Serve it alongside the dish.
Difference
It’s best to make the salsa yourself, and then you can choose between two traditional varieties: chilaquiles verdes or chilaquiles rojos. Unlike a nacho platter, Mexicans say you should eat chilaquiles with a fork. But if you prefer eating with your hands, don’t let that stop you.
