Trouc’s Snail Stall
Thái Thị Kim Phượng, better known as Trouc, goes to the market with her husband every morning to personally select snails for the dish she learned from her father. Trouc starts with fried garlic, then adds the snails and coconut milk. She also sells fifteen other dishes: with clams, scallops and other shellfish. And she does it all with just one portable gas stove and one charcoal grill.
