These are top chefs’ favorite quick dishes

These are the dishes top chefs such as Michiel van der Eerde and Joris Bijdendijk like to make when they’re hungry and in a hurry.

Schilo van Coevorden – Crêpes
“I have two very sweet children who are very fussy eaters. That’s frustrating for my wife and me, but I do cook at home from time to time. I like making simple dishes such as vegetable soup, osso buco, chicken curry, all that sort of thing. And I can make really delicious thin crêpes. Yes, they do like those.”
Michiel van der Eerde – Belgian endive
“Belgian endive is a classic dish with Belgian endive, ham and some lovely young matured cheese. I roll it in melted butter with a little breadcrumbs. I also think a meatball is a real treat. Delicious half-and-half ground meat with plenty of herbs. Within half an hour, there’s something tasty on the table.”
Michael Wolf – Sticky chicken
“I quickly make some ‘sticky chicken’ with chicken thighs, and glaze the chicken with a reduced sauce of honey, ketjap and ketchup, with a little lime and a few grated onions added.”
Joris Bijdendijk – Green papaya salad
“Green papaya salad. I peel green, still unripe papayas and cut them into julienne strips. Then you pound palm sugar, lime juice, a chili, dried shrimp, tamarind juice and garlic. Mix it all together and eat it just like that.”
François Geurds – Quinoa salad
“At home, I like making lots of salads and quinoa, often with lots of herbs mixed in and a little hummus. I love Lebanese cuisine, so I like drawing inspiration from it.”
Jonathan Karpathios – Juice
“When I want to eat quickly and well, I simply make a juice. After that, I don’t really care as much about what I eat. We have a vegetable juicer at home, and I drink that in the morning. I don’t have to pay as much attention to the nutritional value of what I eat for the rest of the day, because I’ve already had everything I need.”
