This delicious Provençal cod is on the table in 40 minutes

Looking for a simple yet flavourful dish that’s on the table in 40 minutes? This oven dish with juicy cherry tomatoes, piquant olives and a splash of white wine is perfect for a weeknight. It’s delicious with cod, but our favourite cheese that never melts—halloumi—is a delicious vegetarian alternative. Serve with crusty bread to mop up all those delicious juices. This dish is quick, nutritious and packed with Mediterranean flavours.

How to make Provençal cod (or halloumi)
- Preheat the oven to 180 °C.
- Place the cherry tomatoes, olives and red pepper in an ovenproof frying pan or baking dish, along with the capers, olive oil and herbs. Pour in the white wine and season with salt and pepper. Toss everything together and place in the oven for 20 minutes.

- After 20 minutes, the vegetables should be soft. Place the halloumi or cod on top and sprinkle with salt (if you’re using halloumi, you’ll need less salt). Drizzle with a little extra olive oil and add a splash of honey.
- Bake the cod for 10 minutes or the halloumi for 15 minutes.
- Serve with a lovely chunk of crusty bread.
