This Is How to Make Your Tomatoes Taste Riper

A ripe, juicy tomato tastes like summer to me. So it’s a real disappointment when all you can find at the supermarket are tasteless, unripe specimens. With this handy trick, you can still get the best out of every tomato.

Halve the tomatoes or cut them into slices or pieces, place them in a colander and sprinkle some salt over them. Use roughly one heaped teaspoon per pound. Let the tomatoes sit for about twenty minutes; the salt draws moisture out of them. Less moisture means an extra-concentrated tomato flavor. It’s that simple. Then we can all pretend it’s summer all year round.
Another great benefit: all the moisture drawn out by the salt won’t end up in the salad. That way, you’ll never again have a puddle of tomato juices at the bottom of the salad bowl or on your plate.
