This one ingredient turns fried rice into a world-class meal

Seriously: you can wake me up in the middle of the night for fried rice. I love it so much, and it’s easy to make too. You may already know that many chefs swear by rice that was cooked a day earlier, but there’s another ingredient those same chefs swear by — and that turns your fried rice (fried rice) into a true star meal.

And it’s an ingredient you might not think of right away, although it really makes a huge difference. What is it? Sugar.
A little already works wonders
You really don’t need to throw a kilo of sugar into the pan; a little bit makes a difference very quickly. And you can use different types of sugar. White sugar works perfectly well, but brown sugar and even maple syrup do too. It’s a matter of experimenting and seeing what you like best. Why does sugar make such a difference in this dish? Because it balances all the other flavors — and fried rice is quite the flavor explosion.
Especially if you serve some kimchi with it — then you really shouldn’t forget the sugar. The sourness of the kimchi pairs incredibly well with the subtle sweetness of the sugar, making the flavors come through so much better as a whole. Seriously, try this, because it’s truly a game changer.
You’ll want to add sugar here too
Do you also always love tamagoyaki – the egg on top of your sushi? That’s because the egg is seasoned with a splash of soy sauce and, you guessed it: sugar! Adding sugar to your omelet is also a good idea.
