Especially when you have good-quality meat, prepare it properly, serve it with good sauces, and marinate it well. Yep, I’m talking about spareribs. And I’ve now discovered the secret ingredient that makes spareribs truly irresistible.

It’s black coffee. Yesss, you probably didn’t see that coming, did you? Still, it can take your spareribs to a much higher level. Coffee and spareribs go incredibly well together. It’s great for both the flavor and the texture: the acidity of the coffee keeps the meat wonderfully tender. And that’s ideal with spareribs—the meat should fall right off the bone. And then you might think: couldn’t you use lemon or vinegar for that, since they’re acidic too?

No; lemon and vinegar are simply too acidic. Coffee contains exactly the right amount to keep the meat tender. It’s also just acidic enough to keep the flavors of your marinade balanced; whether you go for BBQ or something spicy.

There are several ways to prepare your spareribs with coffee. You can make a coffee rub to coat your ribs with. Or how about an Irish coffee rub for spareribs? Delicious, too! Another option is to soak your ribs in a bath of cold coffee for an hour. After that, prepare the spareribs as you normally would; so start by marinating or seasoning the meat. Again, it may sound strange—but just try it.

Coffee doesn’t just improve your spareribs; it’s also a tried-and-tested ingredient in pasta sauce. So whether you’re making a bolognese or lasagna, just a teaspoon of instant coffee or espresso stirred into your tomato sauce is enough to create the desired effect.
