The first heatwave is a fact and suddenly the whole of the Netherlands is flocking to terraces. Everyone meets up for one drink (and then stays until closing time) and suddenly an ordinary Tuesday feels like a vacation.

This wonderfully summery feeling also calls for a good aperitif. My favorite? The St-Germain Spritz. Definitely not too heavy, not too sweet either, just wonderfully refreshing.

A spritz with just a little more character

Because while a classic spritz can sometimes be quite bitter, the St-Germain version is fresh and floral. The combination of elderflower liqueur, prosecco and sparkling water makes it light and summery. The kind of drink that makes you think after the first sip: this is exactly what I wanted.

Want to make it yourself? You can hardly go wrong

You’ll need:

  • 40 ml St-Germain
  • 60 ml prosecco
  • 60 ml sparkling water
  • ice cubes
  • a twist of lemon

Fill a large wine glass with ice, pour in the St-Germain, then add the prosecco and sparkling water. Stir gently and finish with a slice of lemon. If you happen to be able to buy them somewhere, an edible flower on top is really the loveliest touch.

Why that St-Germain liqueur is so delicious

It really comes down to the elderflower. Up to a thousand freshly picked blossoms are used for a single bottle. This gives it that subtle, floral flavor without becoming perfumey. That is precisely why it pairs perfectly with long drinks, a board full of snacks and friends who should really have gone home hours ago.

So: grab a spot on a terrace or pull a chair into the garden. Summer never lasts long enough in the Netherlands, so you’re absolutely allowed to celebrate it a little.
