Tofu Ice Cream. Delicious? Yes!

Of course, you can use tofu in stews, noodles and spring rolls. But what about tofu ice cream? Doesn’t sound appealing? Think twice! Favor Flav’s editor at large Marjan Ippel tasted it with some skepticism and was won over.

How often do you reach in vain for the tofu at the supermarket, because others have already cleared the shelf? And surely that’s not only because the Netherlands Nutrition Centre has included ‘the white block’ in the Wheel of Five.

Tofu is so much more than a healthy, plant-based choice or meat substitute. Tofu can also be wonderfully sweet. Tofu donuts, tofu desserts and tofu ice cream are happening. Wait a minute, tofu ice cream… Is it delicious?

We had our doubts. It doesn’t sound very sexy, after all. It doesn’t immediately feel dulce de leche-sexy, so to speak. But it really is delicious.

Tofupedia
Especially when ice cream maker Kees Raat of Metropolitan Deli in Amsterdam gets to work with it. Which is exactly what he did for the first anniversary of the website Tofupedia, the Wikipedia for tofu (dishes).
The question was: make tofu ice cream irresistible. And Kees did. Twice, in fact: once vegan with banana, and once with chocolate, cream and Kikkoman(!).
Tofu ice cream sounds less sexy than it tastes.
Kees Raat: “Turning tofu into ice cream is a challenge. It contains a lot of moisture, and you don’t want any pieces in your ice cream either. For the banana version, I therefore marinated the tofu in soy sauce with the peel of the Japanese citrus fruit yuzu, and then mixed it with a base of water, banana and sugar. That gives it that exciting and surprising flavor.”
The tofu ice creams are an initiative of Tofupedia and can be sampled until 25 June at Metropolitan Deli Amsterdam.
