Top Chef Manoella Buffara Cooks ‘Meat-Free’ at RIJKS

Chef Joris Bijdendijk manages to tempt renowned international chefs to come to Amsterdam every year for a guest appearance at his restaurant RIJKS. It results in an impressive line-up of chefs who have come to cook before. Always chefs with a special story and a distinct vision and cooking style, such as Mauro Colagreco of restaurant Mirazur***, recently ranked number 1 on The World’s 50 Best Restaurants list 2019. The next chef coming to restaurant Rijks this year is Manoella Buffara.

Her restaurant Manu is ranked #42 on the most recent World’s Best 50 list for the Latin American region and won the One-To-Watch award two years ago. Among others, she worked at restaurant Noma in Copenhagen and Alinea in Chicago. Buffara is known as a figurehead of a new generation of chefs with a passion for vegetables, local products and a keen eye for socially and environmentally responsible entrepreneurship.

As both a chef and activist, she is strongly committed to making the world a better place. For example, she helps her local suppliers develop into sustainable businesses. She also supports local social projects such as an urban beekeeping initiative, establishing urban farms, training local youth and leading campaigns for litter, water and waste reduction.

Week Without Meat
Buffara will cook on 14 and 15 March, during the closing of Week Without Meat, which takes place from 9 to 15 March this year. Meat-free cooking will take place throughout that entire week at restaurant RIJKS and across the Rijksmuseum. During the RIJKS x Manu event, a menu consisting of 6 snacks and 6 courses will be served for €110 per person. Tickets can be reserved via the RIJKS website.
