Truffles with Smoked Sea Salt

The book Smoked is full of beautiful recipes in which smoke takes center stage. Smoking your own salmon, duck breast or mozzarella, this book explains how to do it. And whether you have a smoker or not, you can easily recreate these chocolate truffles with smoked sea salt at home.

The smoked sea salt (available here) provides a subtle surprise. The sea salt and smoke work very well in combination with the chocolate.”
Method
Heat the cream and sugar in a medium saucepan and let simmer gently for 1 minute. Chop the chocolate into small pieces and place in a small bowl. Pour the cream over the chocolate and stir well to create a glossy ganache. Carefully stir in the sea salt. Chill the ganache in the refrigerator for 2 hours.
Make truffle balls approximately 1.5 to 2 centimeters in diameter and dust them with sifted cocoa powder. You can keep the truffles for 1 week in an airtight container.
