Update: Anthony Bourdain’s food market

Anthony Bourdain, the chef known for many TV shows and books, plans to open the largest and most extensive food market in the US in New York in two years. The area? 15,000 square metres—that’s three football fields combined. All existing food markets and halls around the world will pale in comparison.

It’s not just the size that’s spectacular. The selection will also surpass all the other markets already found in the Big Apple. Bourdain wants to bring a selection of the best food trucks, stalls and stands from all corners of the world to New York, including foreign staff, and is prepared to go to great lengths to make it happen. That’s challenging for Bourdain and business partners Stephen Werther and David Swinghamer (former head of the luxury snack chain Shake Shack), because they have to arrange dozens of visas. Quite a time-consuming and expensive job.

Last summer, it became known that no official lease had yet been signed for the market and that the opening had been postponed until 2019. The site is currently being prepared for the extensive renovation, and Bourdain and his team are busy arranging visas for all the employees being flown in from around the world.
