Veggie burger with shiitakes and mushrooms

You don’t just make a good veggie burger, but with this recipe from Bon Appétit you’re sure to succeed. The burger becomes deliciously ‘mushy’ because the finely chopped shiitakes are mixed with black beans and cheese.

Method

Preheat the oven to 180 degrees and cook the barley until tender, which takes fifty minutes.

Finely chop the mushrooms and then fry them in a pan with pepper for twelve to fifteen minutes. Place the drained can of beans on the baking sheet and let them ‘dry out’ in the oven for eight to ten minutes.

Fry the garlic with the onion and some olive oil in a pan.

Mix the mayonnaise, egg yolk, miso, chili powder, agave, paprika, and cayenne in a large bowl. Add the barley, shiitakes, beans, onion, and garlic and stir well. Using a masher, mash everything into a kind of paste over the course of two minutes. Put a quarter of this paste in the blender and blend until smooth. Then mix everything together again until fully combined. Finally, add the cheeses and season with salt and pepper.

Shape six burgers with your hands and fry them until crisp, which takes ten minutes. Garnish the buns with the burger, slices of cheese, and sauce.

Tip: you can make the burgers two days in advance and store them.
