Restaurant Vermeer in Amsterdam – awarded 1 Michelin star – is back after being away for a while.

Over the past few months, chef Chris Naylor drew plenty of inspiration at his pop-up restaurant Roomservice at Olof’s. He enjoyed the casual atmosphere there, and it has clearly been carried through into the new Vermeer. No stiff formalities, but an open place where you can linger over a meal without feeling uncomfortable. “Without bullshit,” as the chef himself puts it.

Vegetables, vegetables and vegetables

Naylor is known for giving vegetables the starring role on the plate. During the dinner attended by FavorFlav, those were what stood out most. An almost golden piece of chicory with a savory fish sauce, incredible beets with a miso cream and creamy artichoke. Each dish leaves you wanting more.

The staff are clearly excited this evening and proud. You can sense it in everything. Alongside their pride, they also have plenty of knowledge. Every question is answered immediately. The wines are superb too.

You can now have a four-course menu at Vermeer for 70 euros. Still not cheap, but you do get an evening out at a top restaurant.
