What a hit: Vietnamese egg coffee (tastier than it sounds!)

Anyone who has ever been to Vietnam has probably come across typical Vietnamese coffee: as iced coffee or as a ‘regular’ hot coffee. Strong, good coffee, brewed with a special filter, with a generous splash of sweet condensed milk – with or without ice when you want a little refreshment. This ‘egg’ coffee is an even tastier variation!

And no, ‘egg’ coffee may not be the most appealing name. But if we called it soft, foamy custard-topped coffee? Then you’d immediately think, “Yes! Let’s try it!” Understandably so, so let’s take a closer look.

Drinkable tiramisu

You could also say that this is a kind of drinkable tiramisu, and that sounds like a good idea too, doesn’t it? You make this treat by whisking egg yolk, condensed milk and, if desired, a few drops of vanilla extract until light and foamy. So if you have a few minutes, you can make your next cup of coffee extra special without having to be a seasoned barista…

How to make Vietnamese coffee with a thick foam topping

  • Brew enough strong coffee to fill 4 cups three-quarters full.
  • Put 2 egg yolks, 120 ml (sweetened) condensed milk and a few drops (or a small teaspoon) of vanilla extract in a mixing bowl.
  • Mix with a hand mixer (or do this in a stand mixer if you have one) at approximately high speed until a fairly firm foam forms. It should resemble cake batter more than soapy foam with lots of bubbles.
  • After 10 minutes, test whether the foam stays afloat by scooping a very small amount onto a cup of water; if it floats, it’s ready. If not, keep whisking for a little longer.
  • If desired, sprinkle a tiny bit of cocoa powder over the foam, and you’re done!
  • You can of course use this whole recipe for iced coffee; let the coffee cool thoroughly first (or make cold brew coffee) and add ice cubes before spooning the foam on top.
