What is that white stuff that comes out of salmon?

No matter how hard you try with that wonderful piece of salmon, that white stuff often leaks out. What on earth is it, is it edible, and can you do anything about it?

That white stuff is called albumin, and it is a protein. So don’t worry, you can eat it perfectly well, but of course it doesn’t look particularly appetizing.
What can you do about it?
Albumin comes out of the salmon when you cook it at too high a temperature. So don’t cook your salmon too intensely if you want to prevent the white stuff. Do you want that crispy crust on your salmon? Start with the skin side down—the skin then acts as a protective layer between the fish and the hot pan. The final tip is a logical one: don’t overcook your fish. It’s not only tastier, but overcooked fish is also more likely to release albumin.
