What to do with leftover chicken?

Didn’t manage to finish all that chicken? Throwing it away is a waste if you can enjoy it for longer. Here’s what to do with your leftover chicken.

Spring roll or egg roll
Spring rolls are perfect for using up leftover chicken in a delicious way. You can use this recipe as a guide, but you can actually use almost anything you still have at home. If you replace the wrappers with egg-roll wrappers and fill them less, you can throw them straight into the deep fryer for a good portion of mini egg rolls.

Sandwich
Super simple: just turn it into a sandwich. For example, this one with cheddar and honey mustard dressing.

You can also very easily transform your leftover chicken into various chicken salads. If you chop or shred the chicken, you can then mix it with Greek yogurt and mayonnaise. Add some salt and pepper and your basic mixture is ready.

Next, you can add these pestos, or mix the salad with curry. If you replace the yogurt and mayonnaise with satay sauce and sambal, you have chicken satay salad.

Salad

Chicken pot pie

Soup
If you really want to use every part of the chicken, you can very easily make stock from the chicken carcass. You could then make a good chicken soup with that stock by adding your leftover chicken meat.

Snack
Chicken skin is delicious to eat on its own. If you have leftovers, you can turn them into a crispy snack in no time.
