Difference in color

At the start of the growing process, a bell pepper is green, purple, brown or white. During ripening, the vegetable eventually turns yellow, orange or red. The final result depends on the variety. You read that right: green bell peppers are simply unripe. They are harvested earlier, which is why they are cheaper than their brothers and sisters.

Did you know that bell peppers are best stored in the refrigerator?

Difference in taste

The early harvesting of green peppers also explains the bitter taste they have. In addition to green ones, yellow bell peppers can also taste bitter. This bitterness works well in hot dishes; for example, try this eggplant dish. As the bell pepper ripens, it produces more sugar, resulting in a sweet taste (surprisingly). Speaking of sweet: the red one wins in this regard. Orange bell peppers are characterized mainly by an enormous dose of freshness and are therefore perfect for use in summer salads.

And then one final fun fact: bell peppers also have a sex, which you can recognize by looking at the bottom. Does your bell pepper have four bumps on the bottom? Then it is male. Are there only three? Then you have a female one.
