Whisky and food

First of all, the exceptionally happy combination of Talisker x Syrco. Both are so deeply rooted on the coast, although there is quite a bit of water between them. The Talisker distillery is located on the Scottish island of Skye, right by the sea, which is why salty notes can be detected in the whisky. These, in turn, pair perfectly with the brilliant creations coming from the kitchen of Pure C. Every dish contains or is accompanied by a variation of Talisker single malt, such as the 10-year-old whisky in a cocktail with the samphire leaves we picked ourselves. Alongside it is some tender coppa from a local butcher, and that’s only the beginning…

Highlight

The deliciousness truly never ends. The whiskies are powerful in flavor but soft on the finish, the dishes knock us sideways with their creativity, and everything makes it clear that the greatest possible love for quality goes into the work here. Everything that came from shells was a highlight for me, with the scallop with truffle and mustard leading the way. We steadily continue to enjoy ourselves, with the ultimate expression of 25-year-old Talisker alongside the chocolate dessert. And don’t think, ‘This is completely out of reach for me,’ because from €39.99, you can already find a bottle of Talisker at a good liquor store.

Match made in heaven. And by the sea.

Syrco Bakker: ‘We have been working with Talisker for our house cocktails for some time, but this is different and very special. The great thing is that when a framework is established, as it is here through the flavors of the different whiskies, your creativity is challenged even more. That can lead you to exciting, less obvious things. For example, the dish with tomato jelly: it’s an umami bomb that merges perfectly with the salty whisky cocktail.’

How to make Talisker Campfire Hot Chocolate

Ingredients:

  • 50ml Talisker 10 Years
  • 125ml milk (oat milk or dairy milk)
  • 2 tablespoons dark chocolate powder
  • 10ml sugar syrup
  • Campfire mug
  • 1 large toasted marshmallow

Combine all the ingredients in a milk frother and heat. Pour the mixture into the campfire mug and finish with the toasted marshmallow.
