Why Freezing Tomatoes Is a Really Good Idea (If You Do It This Way)

Tomato season is ON! Yes, these may be rather specific food things that we can get very excited about, but come on; isn’t a delicious, intensely flavorful, juicy, ripe tomato simply wonderful in summer? And although the following may seem counterintuitive, you can absolutely freeze tomatoes so you can enjoy them again later in the year. But we do recommend the following tips…

You need to put in remarkably little effort to ‘stockpile’ your fresh tomatoes for when the weather gets colder and you want to make delicious hearty soups and stews again.

Done in a flash

All you have to do now is: virtually nothing. Just put your tomatoes, like that, straight into a freezer bag and place them in the freezer. Don’t peel them, don’t purée them—there’ll be time for all that later.

Save some for later…

Of course, you’re not going to let them thaw and then eat them raw. That wouldn’t be much fun. But when you let them thaw in the refrigerator and then peel them (which is also very easy at that point), you’ll have the perfect tomato for making the best tomato sauce yourself, a good hearty soup or a delicious chicken curry. The flavor and texture will have changed a little, but they’ll still make a great umami base to keep cooking with.

You won’t hear us say that a can of high-quality tomatoes isn’t tastier or more convenient. But say you still have a sizable batch of ripe tomatoes at home and you’re about to go on vacation, for example—then this is an excellent no-waste option!
