Dozens of butchers took part in the Spareribs Trophy, organised by the Royal Dutch Butchers’ Association (KNS). Every year, it is quite a task for the jury, and this year too, the level of the artisanal butchers’ ribs was very high.

Making good spare ribs requires craftsmanship. So many factors influence the end result: the meat, the rub, the preparation, to name just a few.

High-quality spare ribs

“Passion combined with craftsmanship was clearly evident in this 2023 edition. Due to the high level of the participants in this competition, it was a considerable challenge for us to arrive at these 10 finalists. The right cut, attention to the preparation of the racks, excellent seasoning and the grilling of the spare ribs were clearly evident among the entrants. Hats off to them!” the jury said about the competition.

Last year, butcher William Hermanussen of the butcher’s shop of the same name in Overasselt walked away with the 2022 Spareribs Trophy. He had already won it in 2014 and 2019. Who will take home the coveted trophy this year?
