Yuzu mimosa

As far as we’re concerned, a mimosa is the ideal breakfast drink for adults. Fresh orange juice for the vitamins, with a generous splash of bubbles for the atmosphere. As foodies with a soft spot for Asian cuisine, we’re especially happy with the version made with yuzu juice.

Yuzu
Yuzu is a small Japanese citrus fruit that is hardly available in the Netherlands. Its juice is much softer and more subtle than lemon juice. In the distance, you can even taste a hint of mandarin. Yuzu is mainly used in sauces, gels and mayonnaise. Fresh yuzu is very exclusive. Only the most beautiful fruits with undamaged skin make the cut, and that is just 10% of the harvest. In the Netherlands, there is one importer where you can buy fresh Japanese yuzu. The rest of the supply mainly comes from America and is of inferior quality. Fortunately, the juice is produced on a larger scale, so it is readily available at well-stocked Asian supermarkets and wholesalers.
The recipe
Fill a glass halfway with orange juice (grapefruit juice works too), top it up with bubbles and add a few drops of yuzu juice to taste. You don’t need much, so the small bottle will last you quite a while.
