I Asked (Star) Chefs What They Eat When Hungover

I’ve been asking questions for as long as I can remember. Good questions, stupid questions (because yes, they definitely do exist), strange questions and useful questions. I do that in this feature, too. Ask questions. Of (star) chefs. A different one every week. Not a different chef, but a different question. This week: what do you eat when you’re hungover?

Michiel van der Eerde (BAUT): “That doesn’t happen very often anymore.”
Jacob Jan Boerma (De Leest ***): “Lots of vitamin C; kiwis, raspberries and anything light, but passion fruit quickly gets me back on my feet.”
Pascal Jalhay: “From a night out? Paracetamol/ibuprofen. If I’m simply extremely tired? Soto ayam—soups are totally my thing.”
Soenil Bahadoer (De Lindehof **): “Then I don’t feel like eating anything. Maybe chicken soup; a bit of salt and fat, some vegetables and shredded chicken. Pot au feu is also delicious when you have a hangover. It gets you going again.”
Joris Bijdendijk (RIJKS *): “Blood sausage from the tropical shop on the Albert Cuyp.”
Edwin Vinke (De Kromme Watergang **): “A good spicy curry.”
Schilo van Coevorden (Conservatorium Hotel): “I firmly believe in fried eggs with bacon, sausages and strong English tea with milk. A real English breakfast, but without the beans.”
Jonnie Boer (De Librije ***): “Champagne with fried eggs.”
Freek van Noortwijk (including Breda, Guts & Glory, Maris Piper): “Roti.”
Sergio Herman (including The Jane**, Pure C, Frites Atelier): “Hungover from having had a little too much to drink? Then a hearty breakfast. Hungover from working late in the kitchen or working at an event? Then a light breakfast, with cold-pressed juices and fruit.”
