Buffalo

The ultimate American bar snack: spicy buffalo wings with a blue cheese dressing. Add a few celery sticks (which you can also dip into the cheese dressing) and you’re all set. Coating them in cornstarch makes them ultra-crispy, which is exactly what you want, of course.

Chongqing chicken wings

I thought I had a high tolerance for spicy food, until these wings were served to me at Mission Chinese in New York. The menu already had three peppers as a warning, and the staff went out of their way to emphasize that they were really very spicy. No problem for me, of course, I thought. Then, when I got to wing number two, I suddenly felt sharp pains shooting through my head, went pale and tears started rolling down my cheeks. I had literally never experienced anything like it, but wow, were they delicious. Luckily, the recipe is online, so if you’re ready for next-level heat, you have to make these.

Korean Fried Chicken

This is definitely my favorite when it comes to spicy chicken. The wings are normally deep-fried and then coated in a spicy mixture of Korean chili paste, soy sauce, garlic and sugar, among other ingredients. I find deep-frying quite a hassle, so these days I always make this recipe instead. It lets you bake the wings until crispy in the oven, and that’s actually just as delicious.

Jalapeño-honey

If you like recipes with a very short ingredient list, you should make these little chicken wings tonight. You don’t need much more than jalapeños, honey and soy sauce. Oh yes, and chicken wings, of course. Mix everything and put it in the oven until everything is deliciously sticky. Mmmmm…

15 red chilies

This recipe contains no fewer than fifteen (!!) dried red chilies. The fish sauce and garlic powder give the wings plenty of extra flavor, making you want to lick your fingers completely clean.
