Homemade healthy flapjacks with honey on cooling rack

Delicious, a warm bowl of oatmeal in the morning. With lots of cinnamon, of course. Did you, like me, stock up big-time and are your kitchen cupboards practically overflowing with oats? Use them up with one of these recipes.

Raspberry bars

A sort of crumble, but with a delicious pastry base too. Made too much? Freeze the pieces separately and briefly warm them in the oven when you want to eat them again. Mmmmm.

Crumble

Make sure you always have frozen fruit at home so you can quickly throw together a crumble (this method always works!) at any time. This recipe uses mixed berries, but you can also make it with blueberries. Or apple, or pear.

Crack pie

That famous crack pie Christina Tosi makes in Chef’s Table? It’s actually pretty easy to recreate at home. The secret to the best base ever? First, you make oatmeal cookies, let them cool and crumble them (with even more butter and sugar) into a base. Add the gooey filling and you’re done. Watch out, this one is highly addictive.

Granola

At Eleven Madison Park, one of the best restaurants in the world, you get a small bag of homemade granola after dinner for the next morning. Cute, right? And especially delicious. The granola is super easy to recreate at home and is honestly the best granola I’ve ever eaten. It’s not exactly healthy, since there’s simply a whole lot of sugar in it. But whatever, it sure is tasty.

What’s better than chocolate chip cookies? Chocolate chip cookies with oats mixed into the dough! They give the cookies a slightly firmer texture, and you really won’t be able to stop at just one. Oops.

Pie

A classic American pie with a thick layer of chocolate filling topped with a chewy oatmeal filling. It’s also known as the poor man’s pecan pie, but just because it’s cheaper doesn’t mean it isn’t incredibly delicious. It’s so filling that you really can’t manage more than one slice, but of course you do anyway. Prefer something lighter? Then make this oatmeal tart from the Airfryer instead.

The ultimate oatmeal cookies may well be flapjacks. A little less well known in the Netherlands, but just wait until you’ve tried these super easy cookies. They’re wonderfully chewy because they contain plenty of butter. Seriously, everyone loves these.

No-bake pistachio cookies

Don’t feel like baking but do feel like eating cookies? These oatmeal and pistachio cookies don’t even need to go in the oven. Simply mix all the ingredients and let them set in the refrigerator. Anyone could make them.

Craving pancakes but still want to pretend you’re being healthy? These are made with whole-wheat flour and oats, but you won’t taste that at all thanks to the caramelized banana and blueberries. What a great way to start the day!
