Apple and cherry crumble

Remember? Our giveaway from a while ago? In collaboration with Big Green Egg and EGG expert Jeroen Hazebroek, FavorFlav organized the ultimate Big Green Egg Experience in Westerpark for Amsterdam’s most fun group of friends.

There, among other things, we ate this incredibly delicious apple and cherry crumble. From the EGG. Would you also like to know how to make it at home? We’re more than happy to tell you. This recipe makes enough for two to three dishes like the one in the video, or one larger pie.

Method

Mix the flour, sugar and salt by hand. Gradually crumble the butter into the mixture. Let the dough rest for half an hour. Peel and cut the apples into half segments. Mix a little vanilla through the apple pieces. Fresh vanilla is preferable, but vanilla sugar is more affordable. Cover the bottom of an aluminum baking dish or several small dishes with the cherries. Crumble the dough over the fruit. Try to cover it completely, but keep it loose and airy. A little apple may stick up through the dough.

Fermentation can be learned

Bake the crumble in a Big Green Egg at a temperature of 200°C. The EGG should be fitted with a heat shield/conveggtor and, ideally, the pie should be placed on the pizza stone (although this is not necessary). Bake the small pie for about 20 minutes, or at least until the crumble crust is nicely browned and the cherry juices are bubbling up. The red fruit should have burst and serves as a sauce around the firm fruit. Let it cool briefly and serve lukewarm. Delicious with crème fraîche.
