Crispy Deep-Fried Shrimp Toast

Toast with shrimp may not sound very Chinese, but this dish is an absolute star at any dim sum session.

It’s also very easy to make at home. We think it’s perfect as a snack with drinks, because the toast is deliciously greasy and crispy. It goes very well with a cold glass of beer. If you like spicy food, you can optionally add 2 tablespoons of sambal to the shrimp mixture.
How to make deep-fried shrimp toast
Peel the shrimp and remove the digestive tract. Put the shrimp in the blender with the lemongrass, fish sauce, ginger, and salt and pepper. Blend until you have a shrimp paste.
Spread the shrimp paste onto the bread. Put the sesame seeds on a plate and press the spread side of the bread into them, so that the entire top is covered with a layer of sesame seeds.
Pour a generous layer of sunflower oil into a frying pan and heat it well. Fry the toast shrimp-side down for 2 minutes, until crispy. Turn the bread over and fry the other side for another minute. Cut the toast into strips and serve immediately.
